The symposium called Cultivating Food Justice: A Community and University Engagement will give voice to the diversity of life and struggle of those who grow, pick, transport, cook, or lack adequate access to food.
The goals for this symposium are to:
- explore the meaning of food justice through a multimodal program
- illuminate the work of food justice advocates
- educate and engage the multi-campus communities and the greater Colorado community on who lies beyond the food label; and
- capture and disseminate the symposium through video and graphic illustration to share with a larger audience and provide a platform for future work.

Come learn how to preserve your food using a method as old as civilization - fermentation! Participants will learn how to use lactobacillus - that's a tiny yeast that is found in the air and on the skin of most fruits and vegetables - to preserve old from their garden.
We'll be learning from two pros in the business - Mara and Willow King from Ozuke Foods - who will teach us how to make sauerkraut and kim chi.
